The Exchange Brewery is happy to announce the release of its first Gluten-Free Saison. Made from buckwheat and sorghum, this refreshing brew appeals to a large crowd, whether you have a gluten-intolerance, a specific diet to follow or are just looking for a good and well-balanced saison beer this summer.
It has been a long project in the making for The Exchange Brewery, and the brewers are very pleased with the result : «We are happy to be providing a great gluten-free option to all patrons in our tasting room.»
« We began with a series of raw material testing of gluten free grains and sugar sources, both for colour contribution and flavour profile.» explains Sam Maxbauer, Head Brewer at The ExB. «We tested quinoa, sorghum, buckwheat, amaranth and some various seeds. We then settled on sorghum and buckwheat as the best base flavour profile to begin building our recipe on. »
The ExB Brewers meticulously cleaned and inspected all equipment for the brewing, fermentation and packaging. « Working in our regular brew house, an environment with gluten, made this challenging. But with a few modifications to the brewing process, we were able to achieve our final goal of creating a high-quality gluten-free beer, that actually tastes good. »
Before hitting shelves, multiple bottles of the beer were sent to a testing lab in Quebec. All bottles tested successfully below 10ppm gluten – while the CFIA (Canadian Food Inspection Agency) only requires gluten-free products to be less than 20 ppm.
With the symbol ∄ (meaning « does not exist »), the Gluten Free Saison has already become a hot commodity in the brewery’s tasting room and bottle shop, with many customers specifically asking for this hard-to-find beer variety. As a result of its popularity, The Gluten Free Saison has recently been added to the brewery’s online store, and will continue to be brewed in the future.
