Why the Numbers?

In connection to the brewery building’s roots as Niagara’s First Telephone Exchange, instead of naming The Exchange numbers their beer. Our numbers provide insights into the beers’ flavour profiles; the lower numbers more approachable and sessionable, the higher numbers more flavourful and intense.

Hefe for yeast; Weizen for wheat. Fermented with German-born ale yeast known for its pronounced flavours of cloves and banana.

Plum Berliner Weisse

This brew is soured in our brew kettle giving it a nice tartness blended with acidity from a secondary fermentation with 250 pounds of fresh Ontario blue plums.

Amber ALE

Bronze Medal
2017 Ontario Brewing Awards
Our amber ale took home the bronze medal in the Amber Category out of 20 entries.

This amber ale has a subtle hop backbone that shows off a complex malt character with crystal malts from Chile. They display the common characteristics of carmel, toffee and lightly roasted flavors of crystal malts but with more depth and presence. Malty goodness, medium body.

White IPA

Our White IPA is centered around big fruity hops, classic wit spices of orange peel and coriander, all fermented on our Belgian house yeast. Dry hopped and served fresh as an IPA should be.

Beer labelled with a symbol represent our barrel-aged beers. Using both French and Hungarian oak, the barrel-aged beers are packed with flavour and have the potential for aging.

WITBIER

This brew showcases the collaboration of wheat, spices and yeast. Use of malted and raw wheat give this ale great wheat character and slight haze. Orange peel and coriander play nice with our belgian house yeast. Aged in Hungarian oak.

Cerise

This fruited Belgian-style ale was aged in chardonnay barrels followed by a massive addition of sour cherries from the Niagara region. It is more sour than sweet with a great balance of fruit and funk.

Session SAISON

This low alcohol saison is the perfect introduction to belgian-style beers. Lightly hopped with Vanguard and Crystal, this beer lets pepper and clove flavors of our house yeast shine with subtle oak flavors. Aged in large oak vessels with Ontario-grown Clear Valley hops.

Our non-traditional version of this Flemish ale is decidedly tart from a short lactic fermentation and then aged in oak with a mixed cocktail of wild yeast and bacteria to round out its flavour.

Our gluten-free Saison is brewed with one of our favourite pseudocereals, Buckwheat. Don’t worry – Buckwheat contains no gluten. Its nutty and earthy flavours blend with sweet sorghum, dark Belgian candi sugar and herbal hops for balance of sweetness while maintaining a refreshing finish

Spontaneous Ale

Belgian-Style Sour Ale – Lambic/Gueuze Category

Our Spontaneous Ale is brewed with traditional turbid mashing techniques followed by an extended boil of noble aged-hops. This barrel-fermented ale was inoculated with wild yeast cultures harvested from fruit skins growing in Niagara and using cultures from our own ‘mini-coolship’ experiments. This ale is blended from selected red wine barrels aged no less than one year. This sour ale is perfect for cellaring, it will evolve with time and can be enjoyed for years.

Peach Pi

This Blonde ale began with a short lactic fermentation in the kettle before its journey to wine barrels. It was aged on a generous amount of peaches with cinnamon bark, vanilla beans and a touch of Brettonamyces. Nature’s candy in your hand, or beer, or pie.
