This gluten-free saison is brewed with one of our favourite pseudocereals, buckwheat. Don’t worry – buckwheat contains no gluten. Its nutty and earthy flavours blend with sweet sorghum, dark Belgian candi sugar and herbal hops for balance of sweetness while maintaining a refreshing finish.

This amber ale has a subtle hop backbone that shows off a complex malt character with crystal malts from Chile. They display the common characteristics of caramel, toffee and lightly roasted flavours of crystal malts but with more depth and presence. Malty goodness, medium body.

This hazy, juicy New England-style IPA boasts a solid bitterness with fruity flavours and aromas of citrus, grapefruit and stone fruit.

This brew is soured in our brew kettle giving it a nice tartness blended with acidity from a secondary fermentation with 250 pounds of fresh Ontario blue plums.

SPONTANEOUS ALE - $16

ABV 6.80% | IBU 27 | SRM 3.
Our Spontaneous Ales are brewed with traditional turbid mashing techniques followed by an extended boil of noble aged-hops. This barrel-fermented ale was inoculated with wild yeast cultures harvested from fruit skins growing in Niagara and using cultures from our own ‘mini-coolship’ experiments. This ale is blended from selected red wine barrels aged no less than one year. This sour ale is perfect for cellaring, it will evolve with time and can be enjoyed for years.

BLUEBERRY PI - $5.84

ABV 7% | IBU 19 | SRM 17.
This sour ale was fermented with our house brett culture and barrel aged with a copious amount of wild blueberries. The aroma of ripe fruit is followed by a moderate sourness with lingering berry flavours.

BLACKBERRY PI - $5.75

ABV 6.5% | IBU 14
This ale was aged on blackberries in red wine barrels for an assertive sourness and complex expression of berry flavours.

CLEMENTINE OUD BRUIN - $5.84

This variant of our sour brown ale showcases fresh citrus flavours and aromas with notes of dried fruit and chocolate. Blended from beer aged in red wine barrels for more than one year.

VIGNE SAUVAGE - $14

ABV 10.3%.
This sour beer is a true collaboration between brewer and winemaker. It was fermented with wild yeast and lees from Southbrook Vineyards’ natural Orange wine, and aged in their barrels on Vidal pomace for one year.

GRAND CRU - $5.84

SESSION SAISON - $8.80

ABV 5.0% | IBU 25 | SRM 4.
This low alcohol saison is the perfect introduction to Belgian-style beers. Lightly hopped with Vanguard and Crystal, this beer lets pepper and clove flavours of our house yeast shine with subtle oak flavours. Aged in large oak vessels with whole leaf dried hops.

MAIBOCK - $12

ABV 7% | IBU 30 | SRM 10.
This bock was brewed with a traditional decoction mash, German malt and noble hops. Lagered and bottle conditioned for a smooth and well rounded malt flavour and refreshing finish.

BRETTBIER - $12

ABV 5.8% | IBU 14 | SRM 4.
This brew showcases the collaboration of wheat, spices and wild yeast. Fermented with a blend of multiple Brettanomyces cutures for a fruity and funky take on the traditional witbier style.

BIERE DE GARDE - $14

ABV 7.5% | IBU 25
This beer was brewed with six row barley, wheat and rye for a complex malt flavours with notes of toasted bread and dried spices. Aged in Hungarian oak foeders for 6 months for a smooth and mellow finish.

PEPPERCORN RYE SAISON - $11.95

Brewed with whole peppercorns and rye malt, this saison has a great depth of spicy flavours complimented by earthy hops from France and Slovenia.

WHITE IPA ON BRETT - $12

This barrel aged version of our White IPA is tart and funky from 9 months with wild yeast and dry hopped in barrel for a fruity aroma and dry finish.

DUBBEL - $14

Our take on this Trappist ale is brewed flaked oats and dark Belgian candi sugar, fermented with our house Belgian yeast and aged in French oak barrels.

OUD BRUIN - $16

Our non-traditional version of this Flemish ale is decidedly tart from a short lactic fermentation and then aged in oak with a mixed cocktail of wild yeast and bacteria to round out its flavour.

FLANDERS RED ALE - $16

A Flanders-esque ale aged in red wine barrels and blended to produce a complex sour masterpiece.

This sour ale was brewed in collaboration with our friends at Fairweather Brewing Co. Brewed in the English tradition of strong stock ales that were kept in barrel cellars for years to develop sour and funky flavours. Assertively sour and fruity; to be savoured and sipped.

BELGIAN STOUT - $14

This stout is brewed with dark belgian candi sugar, plenty of roasted barley and fermented with our house belgian yeast then aged in oak barrels.

BREAKFAST STOUT - $12

This big stout is brewed with lots of oats and an infusion of cold brewed coffee to keep you going. Roasted malts add chocolate and subtle notes of dried fruit to this chewy beer, just in case you missed breakfast.

WINTER WARMER (1l) - $18

Brewed with oats, dark Munich, wheat and chocolate malts. Add some brown sugar and spices (cardamom, cinamon, peppercorns and orange peel), age in pinot noir barrels for a year and put in a big ole bottle.

DUAL TONE MULTI FREQUENCY - $18

ABV 6.7% | IBU 20 | SRM 14.
This sour ale is a blend of our Flanders Red Ale and a barrel from our Spontaneous Ale program. DTMF is a nod to the switchboard technologies that brought change to telephone exchange systems in the 1960s. This first blend happened by chance, but the pairing of both sour and funky overtones is undeniably complex.
